'Gazpacho' Salad


'Gazpacho' Salad

About this recipe:This is a great pasta salad for summer picnics or easy dinners. It's colourful and tangy with its lime-tomato dressing and hari mirchi.



 Ingredients


Serves: 6 

  • 225g fusilli pasta
  • 4 green onions, chopped
  • 1 green capsicum, chopped
  • 1 green chilli, seeded and minced
  • 2 tomatoes, chopped
  • 1 cucumber
  • 4 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1 clove garlic, crushed
  • 4 tablespoons fresh lime juice
  • 1/4 teaspoon freshly ground black pepper
  • 175ml tomato juice

Directions

Prep:20min  ›  Cook:10min  ›  Ready in:30min 

  1. Cook fusilli according to package instructions; drain.
  2. In large bowl combine pasta, onion, green capsicum, chilli, tomatoes, cucumber, oil, salt, garlic, lime juice, black pepper and tomato juice. Toss well and chill in refrigerator for 2 hours. Toss again before serving.

About this recipe: I loved crunchy, spicy fried roti with a cup full of cool raita. Great for when you have rotis left over.
 

Ingredients

Serves: 4 

  • 3 Rotis
  • Oil 1 tsp Tadka Seeds
  • 1 medium onion, cut into long flakes
  • 4 Green Chilies -Cut into small pieces
  • 3-4 dry curry Leaves
  • 3 cups Cabbage thinly shredded
  • 1 cup Peas
  • 1 Capsicum cut length wise
  • 1/2 tsp Green Chilli Sauce
  • 1/2 tsp Red Chili Sauce
  • 1 stem Coriander Leaves
  • Salt – to Taste

Directions

Prep:45min  ›  Cook:15min  ›  Ready in:1hr 

  1. Mush the rotis into small pieces. Take a heavy bottomed pan and heat the oil. Put tadka seeds, onion, green chilies and curry leaves and saute for couple of minutes. Put the cabbage, peas and capsicum and fry till the veggies are half cooked (you need to have crunch in the veggies).
  2. Put mushed roti pieces and saute for 5 minutes. Now put the green chilli sauce, red chilli sauce and mix very well. Put the coriander leaves and mix. Serve it hot with raita.

Bread Pizza Recipe
Bread Pizza Recipe is made with Bakery Bread, topped with Fresh Vegetables and Cheese. It can be made at home in just a few minutes and kids really love it.

Ingredients

  • 8 Bread slices
  • 2 teaspoon unsalted butter
  • 1 small onion
  • 1 tomato
  • 1 capsicum (bell pepper)
  • 1/2 cup pizza sauce
  • 1/2 cup cheese, grated
  • Salt to taste

Instructions

  1. Arrange the bread slices on a chopping board, spread a good amount of butter and pizza sauce on all bread slices. Bread Pizza Recipe step 1
  2. Slice the vegetables thinly (you can add mushroom or paneer in this). Arrange the vegetables on all bread slices and top with generous amount of grated cheese. (I have used parmesan cheese here but you can go with mozzarella cheese as well). Bread Pizza Recipe step 2

Pizza Sauce Recipe

Servings: 2 cups for 4 pizzas

Ingredients:pizza-sauce

  1. 8 dried red chillies
  2. 1 tsp tomato ketchup (store Bought)
  3. 2 tbsp fresh tomato paste
  4. 4 cloves garlic
  5. 1/2 inch ginger
  6. 1 tsp oregano
  7. 1/4 tsp sugar
  8. 1 tsp onion powder
  9. 1/4 tsp dried basil
  10. 1/4 tsp ground black pepper
  11. Salt to taste

How to make Pizza Sauce:

  1. In a grinding bowl combine dried red chillies, garlic, ginger, dried basil, sugar and little bit of water.
  2. Blend until smooth.
  3. In a large bowl add tomato ketchup, tomato paste, ground red chilli paste, salt and black pepper.
  4. Stir in onion powder and oregano.
  5. Mix well and leave to set at least for 2 hours to blend all the flavors.
  6. Spread over pizza base and make your favorite pizzas.

Chef Tips:

  1. Store pizza sauce in an air tight container, it will last for a week in your refrigerator.
  2. Use this pizza sauce for making plain pizza’s or pizza with toppings.
  3. You can use rosemary leaves to make it more flavorful.

Aloo Gobi Dry Recipe is the Simple but very Tasty Punjabi Dish cooked with Aloo, Gobi, Bell Pepper and Indian Spices. It's a Side Indian Dish to serve with Chapati, Dal and Rice.

Ingredients

  • 1 cup gobi (cauliflower) florets
  • 2 medium aloo (potatoes), chopped
  • 1 tbsp green bell pepper, sliced
  • 1 tbsp yellow bell pepper, sliced
  • 1 tbsp red bell pepper, sliced
  • 1/2 onion, sliced
  • 1 tomato, chopped
  • 2 green chilies, finely chopped
  • 1/2 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp coriander powder
  • 1/2 tsp garam masala powder
  • 1/4 tsp dry mango powder
  • 1/2 cup cooking oil for shallow frying
  • Salt to taste
Instructions
  1. Heat 1/2 cup of oil in a pan and shallow fry the aloo on medium flame.
  2. When aloo are little browned, remove out from pan and now shallow fry gobi florets in same oil.
  3. Drain fried aloo and keep aside.
  4. Also drain shallow fried gobi and set it aside with aloo.
  5. Take out the whole oil from the pan and leave only 1/2 tsp of oil in it. Now add chopped green chilies, sliced onion and sliced bell peppers.
  6. Stir very well on low flame for 1-2 minutes, till the veggies tender.
  7. When the vegetables are almost done, then mix in chopped tomatoes and stir in salt to taste. Keep cooking for a couple of minutes on low flame.
  8. Now add fried aloo and gobi, 1/2 tsp red chili powder, 1/2 tsp turmeric powder, 1/2 tsp coriander powder, 1/2 tsp garam masala powder and 1/4 tsp dry mango powder.
  9. Mix well and cover the pan. Leave to cook for 3-4 minutes, so that aloo and gobi blends with the flavors of bell pepper and spices.
  10. Serve with Rice or Roti and Salad.
Notes
If you do not want to shallow fry aloo and gobi, then you can first saute it in little oil and then mix in veggies and spices, in such case, you will need to cook it for some more time. Another way of making this dish with less calories is, you can steam aloo and gobi and then cook with vegetables and spices.

Ingredients

Wheat flour  1/2 cup 
Rice flour  1/4 cup 
Onion  1 
Green chilli  1 
Ginger, grated 1 tsp
Salt  1 tsp 
Water or buttermilk  as needed 
Jeera  1 tsp 
curry leaves  few 

Method

  1. Chop finely onion, green chilli. Take both the flour, onion,chilli, ginger and salt in a mixing bowl. Use a whisk and add water gradually and mix well. The batter should be watery, not too watery, but thin than the usual dosa batter. You can use butter milk instead of water as well.1-godhuma-dosai
  2. Heat a dosa pan and grease with oil. Pour the batter first outer to form a ring and then in the middle to fill it. The dosa is supposed to be thin, so adjust the consistency of batter and also do not pour over and over. Drizzle some more oil and cook in medium flame. Flip if you want to cook both sides. I usually do not flip as it gets cooked easily.2-wheat-dosa
Notes
  • If dosa doesnt gets cooked while you cook one side, better to flip the dosa.
  • I think without flipping, cooking the dosa in medium flame one side gives a crispy result.
  • You can season the batter with mustard, urad dal, curry leaves, green chillies and then sauté the onions and then add it to the batter. My mom does that way.
  • If you have sour leftover idli dosa batter, then you can skip adding rice flour and add the wheat flour to that batter and mix and make dosa same way as above. Idli dosa batter can be upto 3-4 laddles.
  • Eat hot with sambar or chutney.

Alphonso mango  2 
Sugar  3/4 cup 
whipping cream  1 cup 
Tutti frutti   4 tblsp 
Milk  1/2 cup 

 

Method

  1. Scoop and collect pulp of mango with a spoon and place it in a blender with sugar, milk and blend well until sugar is dissolved. 1-mango-ice-cream
  2. Add whipping cream and whip for a minute or until all the ingredients are mixed well. 2-mango-ice-cream
  3. Pour into a broad, freezer safe airtight box. Freeze it for 3 hrs. 3-mango-ice-cream
  4. Take out and grind again in a mixer until smooth and repeat the same every 1 hour for 4-5 times. 3-mango-ice-cream
  5. Last time add tutti frutti and freeze for 6 hrs or overnight. Scoop and serve. 5-mango-ice-cream

Notes

  • Adding tutti frutti is optional and you can skip it.
  • If you do not get whipping cream you can try using regular cream too. But this tastes best.
  • Grinding few times ensures soft texture of the ice cream, so make sure you grind it and dont mind the mess.
  • You can use ready made sweetened mango pulps available in tins. Reduce sugar accordingly.

Batata poha is so wholesome and tasty that you can make it any time of the day, as breakfast, supper or a simple snack. The potatoes and onions act as a soft and moist interlude to the chewy poha, while the traditional tempering, ginger-chilli paste and lemon juice add to the flavour. While it tastes best when had hot and fresh, it can also be carried in the snack box.

Ingredients

2 cups thick beaten rice (poha) flakes
2 tbsp oil
1/2 tsp mustard seeds ( rai / sarson)
1/2 tsp asafoetida (hing)
1/2 cup finely chopped onions
1/2 cup peeled potato cubes
salt to taste
3/4 tsp turmeric powder (haldi)
1 tsp ginger-green chilli paste
1 tbsp sugar
2 tsp lemon juice
1 tbsp milk
1 tbsp finely chopped coriander (dhania)

For The Garnish

1 tbsp finely chopped coriander (dhania)
lemon wedge

 

Method

  1. Heat the oil in a deep non-stick pan and add the mustard seeds.
  2. When the seeds crackle, add the asafoetida and sauté on a medium flame for a few seconds.
  3. Add the onions and sauté on a medium flame for 1 to 2 minutes.
  4. Add the potatoes, 2 tbsp of water, salt and ½ tsp of turmeric powder, mix well and cook on a medium flame for 4 to 5 minutes, while stirring occasionally.
  5. Meanwhile, place the beaten rice in a sieve and hold it under running water for a few seconds. Toss well to drain out all excess water.
  6. Add the washed and drained beaten rice, a little salt, ginger-green chilli paste, remaining ¼ tsp of turmeric powder, sugar, lemon juice and milk, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
  7. Add the coriander and mix well.
  8. Serve hot garnished with coriander and lemon wedge.

Ingredients (american measuring cup used, 1 cup = 250 ml)
main ingredients:
  • ½ cup rava/sooji/semolina
  • ½ cup rice flour
  • 2 tbsp all purpose flour/maida or whole wheat flour/atta
  • 1 green chili/hari mirch, finely chopped
  • 1 medium onion/pyaaz, finely chopped - about ½ cup of finely chopped onion
  • 5 to 6 curry leaves/kadi patta, chopped
  • ½ inch ginger/adrak, finely chopped (optional)
  • water or buttermilk as required - i added 2 and ¼ cups water *check notes on how to make the buttermilk
  • 9 to 10 black peppercorns - crushed
  • 1 tbsp chopped coriander leaves (optional)
  • salt as required
for tempering
  • 1 tsp oil
  • ½ tsp mustard seeds
  • 1 tsp cumin seeds
  • oil or ghee as required for roasting the dosa
Instructions
  1. take the rava, rice flour, all purpose flour, green chilies, ginger, onion, coriander leaves, crushed black pepper in a mixing bowl.
  2. heat 1 tsp oil in a small frying pan. crackle the mustard seeds first. the mustard seeds should pop before you add the cumin seeds. then add the cumin and curry leaves. saute for a few seconds till the cumin browns.
  3. add this tempering mixture along with the oil to the other ingredients in the bowl. add salt.
  4. pour water or buttermilk and make a thin batter without any lumps. the batter should not be thick or of medium consistency. if the batter becomes too thin, then add some rice flour to slightly thicken it. keep aside for 15 to 20 minutes.
  5. heat the tava or non-stick pan. smear a bit oil with a slice of onion or a small piece of fabric or paper napkin.
  6. with a ladle pour the dosa batter from the edges towards the center.
  7. sprinkle ¼ or ½ or 1 tsp of oil from the top.
  8. let the base becomes golden and crisp. flip and cook the other side. when both the sides are cooked, remove the dosa from the pan. prepare all the dosas this way.
  9. serve the onion rava dosa hot with coconut chutney or vegetable sambar. onion rava dosa has to be served immediately.
Notes
*to make the buttermilk - dissolve 3 to 4 tbsp of yogurt in 2 cups of water. whip the buttermilk very well before you add it to the other ingredients.

1 cup urad dal (split black lentils)
1 cup chana dal (split bengal gram)
1 cup besan (bengal gram flour)
salt to taste
oil for cooking

Description
Malgapadi or IdliPodi is a delicious spice mix made with lentils and dry chillies. Mixed with oil,it adds great flavour to any kind of non-spicy snack like idli, dosa, etc. It is smooth spicy powder, which can be easily mixed with oil at the time of eating. Each household has its own variation and version of the podi. This powder is made by combining urad dal, chana dal, dry red chillies, sesame seeds, asafoetida and salt. You can alter the spiciness of this powder by altering the amount of chillies added. Method

  1. Soak the urad dal and chana dal in lukewarm water for at least 4 hours.
  2. Wash, drain and grind to a smooth paste with a little water.
  3. Cover and allow to ferment overnight.
  4. Next day, add the besan, 1 cup of water and salt and mix well.
  5. Heat a non-stick tava on a medium flame till hot and grease it with a little oil.
  6. Spread one ladle full of the dosa batter thinly on the tava.
  7. Pour some oil from the sides and roast the dosa on a medium flame till it is golden brown in colour.
  8. Fold the dosa into half and remove from the tava.
  9. Repeat with the remaining batter.
  10. Serve hot with malagapadi powder.

 Ingredients

8 whole wheat bread slices
butter for brushing

For The Filling

 1/2 cup grated processed cheese
1/2 cup finely chopped spring onions whites
1 tbsp butter
2 tsp finely chopped green chillies
1/2 cup finely chopped cabbage
1/2 cup grated carrot
1/2 cup finely chopped spring onion greens
2 tsp chilli sauce
1 tbsp tomato ketchup
salt to taste

For Serving

  tomato ketchup

 

Method

For the filling
  1. Heat the butter in a broad non-stick pan, add the spring onion whites and green chillies and sauté on a medium flame for 1 to 2 minutes.
  2. Add the cabbage, carrots and spring onion greens, mix well and sauté on a medium flame for 1 minute.
  3. Add the chilli sauce, tomato ketchup and salt, mix well and cook on a medium flame and cook on a medium flame for 1 minute.
  4. Add the cheese, switch off the flame and mix well till the cheese melts.
  5. Allow it to cool slightly and divide the filling into 4 equal portions and keep aside.

How to proceed

  1. Place 2 whole wheat bread slices on a flat, dry surface and butter them lightly.
  2. Place 1 portion of the prepared filling on each bread slice.
  3. Butter 2 more bread slices and place them on the filling with the buttered side facing downwards.
  4. Brush some more butter on top and grill in a greased griller for 5 to 7 minutes or till the sandwiches are brown and crisp.
  5. Repeat steps 1 to 4 to make 2 more sandwiches.
  6. Serve immediately with tomato ketchup.

 Ingredients:

1 cup Wheat Flour
2 crushed Green Chillies
1 tsp Red Chilli Powder
1/2 tsp Haldi (turmeric)
1 tbsp Ginger & Garlic paste
1 tsp Ajwain 1 pinch Hing
1/2 bunch Methi Leaves
1 tsp Coriander powder
1 tsp Cumin Seeds powder
Salt to taste
Oil as needed

How to make thepla :

  • Put wheat flour in a flat vessel bowl.
  • Mix all the ingredients int it including the methi leaves.
  • Add 1 tsp oil and knead it. Let it stay for 15 minutes.
  • Then make even size small balls of the dough.
  • Roll them separately with a rolling pin into a round shape.
  • Heat the griddle and roast each of the rolled out theplas one by one.
  • First roast one side,turn it upside down.
  • Then put 1/2 tsp oil on the turned side and again it upside down.
  • Repeat the same with the other side.
  • When evenly roasted remove it from griddle.
  • Repeat this for all the balls.
  • Serve them hot with butter or chutney or curd.

ONION ( PYAZ ) KI KACHORI RECIPE

PYAZ KI KACHORI RECIPE

 Ingredients:


For the dough:
2 cups Maida (Plain Flour)
1/4 cup melted Ghee
1/2 tsp Salt

For filling:
2 cups finely chopped Onions
1 tsp Kalonji (Nigella Seeds)
2 tsp Saunf (Fennel Seeds)
2 Bay Leaves
1/2 tsp finely chopped Green Chillies
2 tblsp Besan (Bengal Gram Flour)
2 tsp Dhania Powder (Coriander)
2 tsp Chilli Powder
1 tsp Garam Masala
3 tblsp Chopped Coriander
2 tblsp Oil
Salt to taste

Other Ingredients:
Oil for frying
 

How to make pyaz ki kachori :

  • To prepare the dough combine all the ingredients in a bowl and knead into a semi soft dough using water. Keep it for 5 - 7 minutes.
  • Divide the dough into 12 equal parts and keep them covered under a wet muslin cloth.
  • For the onion filling heat oil in a pan.
  • Add the kalonji, saunf, bay leaves, green chillies and onions and saute till the onions turn light brownin color.
  • Add the besan, coriander powder, chilli powder, garam masala and salt and saute for 2-3 minutes.
  • Add the chopped coriander and mix well.
  • Remove the bay leaves.
  • Allow the mixture to cool completely.
  • Divide into 12 equal parts and keep aside.
  • To make kachoris roll out each portion of the dough into a 2 inch diameter circle.
  • Place one portion of the filling in the centre of the rolled dough.
  • Surround the filling with the dough by slowly streching it over the filling.
  • Seal the ends tightly and remove excess dough.
  • Roll each filled portion into a 2 1/2 inch diameter circle taking care to ensure that the filling does not spill out.
  • Gently press the centre of the kachori with your thumb.
  • Repeat with the remaining dough and filling.
  • Deep fry the kachoris in hot oil over a slow flame till fgolden brown.
  • The kachoris should puff up like puris.
  • These kachoris take a long time to be cooked in the inside too.
  • Serve hot with tamarind chutney and hari chutney.

3. Wear Sunglasses for Good Vision

The right kind of sunglasses will help protect your eyes from the sun's ultraviolet (UV) rays.
Too much UV exposure makes you more likely to get cataracts and macular degeneration.
Choose sunglasses that block 99% to 100% of both UVA and UVB rays. Wraparound lenses help protect your eyes from the side. Polarized lenses reduce glare when driving.
If you wear contact lenses, some offer UV protection. It's still a good idea to wear sunglasses for more protection.

4. Use Safety Eyewear at Home, at Work, and While Playing Sports

If you work with hazardous or airborne materials at work or home, wear safety glasses or protective goggles every time.
Certain sports such as ice hockey, racquetball, and lacrosse can also lead to eye injury. Wear eye protection (such as helmets with protective face masks or sports goggles with polycarbonate lenses) to shield your eyes.

5. Look Away From the Computer for Good Eye Health

Staring at a computer screen can cause:
  • Eyestrain
  • Blurry vision
  • Difficulty focusing at a distance
  • Dry eyes
  • Headaches
  • Neck, back, and shoulder pain
Protect your eye health by taking the following steps:
  • Make sure your glasses or contact lens prescription is up-to-date and adequate for computer use. 
  • Some people may need glasses to help with contrast, glare, and eye strain when using a computer.
  • Position your computer so that your eyes are level with the top of the monitor. This allows you to look slightly down at the screen.
  • Try to avoid glare on your computer from windows and lights. Use an anti-glare screen if needed.
  • Choose a comfortable, supportive chair. Position it so that your feet are flat on the floor.
  • If your eyes are dry, blink more.
  • Every 20 minutes, rest your eyes by looking 20 feet away for 20 seconds. At least every two hours, get up and take a 15-minute break.
